Grapes were manually harvested between
in September. Once the grapes had been transported in 12
kg crates, the crushing, stemming and pressing procedure
took place and was followed by a maceration period of 48
hours and 12 days for Dry Rose and Red wine respectively.
|
 |
|
|
|
The
Red wine is ruby in colour with delicate nuances of ripe red
berries with a subdued woody flavour. An elegant bouquet of spice
and fine tannins result in a perfect harmony of body and acidity.
A perfect compliment with meat and cheese dishes.
The
Dry Rose is a pleasant pink tone with an intense aroma of red
berries, mixed with a fruity tropical
flavour. Pleasant acid
tones making a fresh and appealing combination of flavours. Excellent
with any type of summer dishes (seafood, fish and salads) and also
an excellent aperitif.
|
|
The alcoholic fermentation period was implemented
at 25 degrees, with two drainages per day and followed by
the Malolactic fermentation process for the Red wine. During
the next six months 30% of the wine refined itself in new
American and French oak casks.
